Something Sweet : Brie Cheese Pastry

I'm not really a cheese person. And by that I just mean that I don't typically buy or eat anything besides the ordinary stuff like cheddar or mozzarella.

But recently, I purchased some Brie Cheese for a delicious turkey apple burger recipe (which I will share later). I had a lot leftover and had no idea what to do with it. My wonderful sister in-law recommended I make some puff pastry's out of it...so I did! I have to say it was quite scrumptious, especially fresh out of the oven and topped with a little balsamic strawberry sauce.

Brie Cheese Pastry
Ingredients 
1 sheet of store bought puff pastry, defrosted
2 ounces Brie cheese, chilled
1 whole egg white
2 teaspoons water
2 Tablespoons sugar

Step 1. Line a baking sheet with parchment paper and set the oven to 400 degrees F. Then, lightly flour your work surface. (As you will see later, I forgot to use parchment paper, but the pastry's still turned out fine).

Step 2. Roll the puff pastry sheet into a 12 inch square. 
Using a sharp knife, cut the square in half.



Step 3. Thinly slice the Brie Cheese into small squares. Lay the cheese on one side of the puff pastry, evenly spaced apart.


Step 4. Cover the cheese with the 2nd rectangle of puff pastry. Gently press the sheet to form gently around each piece of cheese. 

Step 5. Using a ravioli or cookie cutter, cut around each mound. 



Step 6. Place your pastry's on the prepared baking sheet & crimp the sides with a fork. Then with a small knife, cut two slits on the top of each pastry for ventilation. 



Step 7. In a small bowl, combine water and egg white, and brush over the top of each pastry.

Step 8. Sprinkle the sugar over the tops of your pastry's then place them in the oven and bake (at 400 degrees F.) for about 10-12 min. or until tops are golden brown.

Step 9. Place on a cooling rack for 5-10 min. then serve with chocolate sauce or strawberry topping.
